Thyme Roast Chicken with Veggies and Sweet Chilli Dressing 😘😘 Wow wow wow this was an hellofreshuk recipe and it really was delicious all under 600 calories. Recipe for 2 below:
INGREDIENTS
2 large Potatoes, wedged
1 Red Onion, cut into 6
2 Carrots, cut into batons
1 Aubergine, diced
Handful of chopped Parsley
2 Chicken Breasts
1 tbsp dried Thyme
100ml Chicken Stock
1 tbsp Chilli Jam
METHOD
Preheat oven to 200c fan, put the wedges into a not stick baking pan, mix with olive oil and cook for 30-35 mins turning halfway through. Spread the rest of the veg onto another baking sheet and drizzle with olive oil and half of the thyme, mix well and roast for 20-25 mins. In a bowl mix the chicken breasts with the rest of the thyme and season. Fry the chicken in a non stick pan for 2 mins on each side then put into the veggie dish to roast for 15-20mins until cooked through. In the frying pan add the stock and chilli jam bring to the boil them simmer for a couple of minutes until boiled. Remove the chicken from the oven ensuring that it is cooked through, slice into five slices. Mix the wedges, veggies and parsley in one of the baking trays. Serves the veggie mix on a plate with the chicken on top drizzled with the sauce. Enjoy!!
