Swedish Meatballs, Chunky skin on Chips & griddled Tenderstem Broccoli 😘😘 Perfect family dinner on a Saturday night, I have never seen Reggie eat so much he absolutely loved it. Recipe for 3/4 below:
500g 5% fat Beef mince
1/2 tsp garlic powder
Seasoning
Mixed herbs
40g / 3 tbsp butter , unsalted or vegan butter
3 tbsp brown rice flour or plain
2 cups beef stock
1/2 cup dairy free yoghurt or cream
Parsley to serve
METHOD
Mix the mince with garlic powder, mixed herbs and season, form into balls and fry for a couple of mins to brown. Remove and place into the oven to cook through for 5-10mins. Meanwhile, in the same pan, melt the butter and add the flour and cook for a minute, while whisking gradually add the beef stock and simmer for 10 mins, add the meatballs into the sauce and add the yoghurt or cream cooking for 2 mins more. Serve with chips, mash or whatever you fancy, some greens and sprinkle with parsley. Enjoy!!
