Sunday Lunch Inspiration – Rolled Pork Loin with stuffing, roasted on top of leeks and carrots, Roast potatoes, Yorkie Puds & Veggies all cooked by my other half 😘😘
Recipe for our roast potatoes below (serves 6)
1.5 kg Maris Piper potatoes, peeled washed and chopped
1 bulb of garlic
red wine vinegar
3 tablespoons olive oil
1 bunch of fresh rosemary
Preheat oven to 190c fan, parboil the potatoes for 8 mins and allow to steam dry for 3 mins. Give the saucepan a shake to fluff up the potatoes and add the olive oil & red wine vinegar and make sure the potatoes are well coated, tip into a roasting tin and roast for 30 mins. Squash down the potatoes slightly to expand the surface area. Break the garlic bulb into cloves and pop into the roasting tin, sprinkle the potatoes with rosemary and mix well, roast for another 45- 50 mins until they are well browned and really crispy on the outside.
