Sticky Teriyaki Turkey Meatballs with griddled veggies and brown rice noodles 😘😘 Wow this was so delicious with thanks to our_allergy_life for the inspiration, healthy, clean and so tasty. Recipe for 2 below:
INGREDIENTS
2 nests of brown rice noodles cooked
2 Pak Choy
Shitake Mushrooms
500g turkey mince
1/2 tsp garlic powder
Seasoning
4 tbsp low sodium soy sauce
3 tbsp honey or agave nectar
1 garlic clove, crushed
1 tsp rice wine vinegar
Sesame seeds to serve
METHOD
In a large bowl mix the turkey mince with the garlic powder and season. Mould into balls and fry in olive oil on a medium heat for 10 mins or until cooked through, meanwhile griddle the pak choy and mushrooms and cook the noodles according to packet instructions. In a small bowl mix the soy honey, garlic and rice wine vinegar. Add the sauce to the meatballs 2 mins before the end of cooking and allow to thicken. Serve the noodles in a bowl topped with the meatballs and veggies, drizzle over the sauce and sprinkle over with sesame seeds. Simple and delicious. Enjoy!!
