Slow cooker Coconut Chicken Curry 😘😘 The easiest curry, just pop it all in and let the cooker do the hard work. Curry in a hurry recipe for 2 below:
INGREDIENTS
400g diced chicken
1 can of coconut milk
1 tsp curry powder
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp turmeric
1/2 tsp ground ginger
1/2 tsp coriander
1/2 tsp chilli flakes
Handful of peas
Cornflour/ xanthan gum to thicken
Seasoning
METHOD
Add all of the ingredients apart from the peas and cornflour into the slow cooker and cook on high for at least 4 hours, add the peas 15 minutes towards the end of cooking and thicken with cornflour/water mix or xanthan gum. Check that the chicken is cooked through and season to taste. Serve with rice. Enjoy!!
