Slow-cooked pulled pork Tacos – looking for something a little different this Sunday? This was a winner in our house, Crispy pork crackling, pulled tender meat from bridge__67 , stuffing & salad all wrapped in gluten free wraps with some wedges on the side… Simple Pork recipe below:
INGREDIENTS
1.6kg shoulder of pork
1 tbsp thyme & oregano mix
2 tbsp dark brown sugar
1 tsp salt
1 tsp pepper
METHOD
Preheat your oven to 200°C fan, line a roasting tin with foil, large enough to cover the pork.
Remove the string, unroll the pork, mix the herbs, sugar and seasoning in a bowl and rub over the pork. Roll the pork back up again. Cook for 30 minutes so the pork browns, then reduce the oven to 130°C fan pour 300ml hot water into the foil, then wrap the foil over the top, cook slow and low for around 6 hours or until tender.
Increase the oven to 200°C fan, uncover the pork then put it back in the oven to crisp for 10 minutes. Remove from the oven, cover with foil and rest for 30 mins.
Shred the meat and enjoy in wraps with stuffing, salad and wedges on the side, or whatever you fancy. Enjoy!!
