Sausage and Bean Chilli – Inspired by hellofreshuk but made a little healthier with heckfooduk chicken sausages and brown rice 😘😘 Recipe for 2 below:
INGREDIENTS
220g chicken sausages, skin removed
1 garlic clove, crushed
1 small onion, finely diced
1 tin of mixed beans
1 tsp cumin
1 tsp paprika
1/2 chilli deseeded and sliced
1 tin tomatoes
150ml chicken stock
Brown rice, coriander and dairy free yoghurt to serve
METHOD
Fry the onion in a little olive oil until softened, add the sausage meat and cook for 5 mins until browned, add the garlic and cook for another minute. Add the spices and chilli and cook for a minute more. Add the tomatoes, stock and beans and stir well. Season if needed and simmer for 10 mins. Serve on a bed of rice sprinkle with coriander and add a dollop of yoghurt. Enjoy!!
