Prawn Curry in a hurry – Healthy and so delicious, this is so much quicker than a trip to the takeaway!! 😘😘 Recipe for 2 below:
INGREDIENTS
1 pack of cooked shelled prawns
Handful of frozen peas
1/2 tin of coconut milk
1/2 tsp cumin
1/2 tsp Garam Masala
1/2 tsp Turmeric
1/2 tsp Curry Powder
1/2 tsp paprika
Chilli flakes
1/2 tin of coconut milk
Brown rice & coriander to serve
METHOD
Heat a little olive oil in a non stick frying pan, add the peas and prawns. Add all the spices and mix well, cook for a minute or 2 and add the coconut milk. Bring to the boil then simmer for 5 mins until thickened. Serve with brown rice and a sprinkle of coriander. Enjoy!!
