Lamb & Veggie Curry πŸ› Just a quick, healthy & easy curry recipe for any day of the week!! 😘😘

INGREDIENTS
250g lamb mince
1 small onion, diced
1 garlic clove, crushed
5 chestnut mushrooms, diced
1 tbsp any curry powder
Mixed frozen veggies
300ml passata
50ml chicken stock
Coriander, chopped
Brown rice to serve
METHOD
Cook rice according to packet instructions. Meanwhile heat a little oil in a large frying pan and cook the onion for a couple of minutes, add the lamb mince and fry until browned. Add in the garlic and curry powder and stir, add in the chopped tomatoes and stock, bring to the boil and simmer for 10 mins, stirring occasionally. Add the frozen veggies and cook for 5 mins adding extra water if needed. Add half of the coriander and season if necessary. Serve the curry on top of the brown rice and sprinkle to with the remaining coriander. Enjoy!!
