Lamb Kofte Tagine – I absolutely love this recipe so quick and easy, healthy and delicious 😘😘 Thank you thebodycoach for the recipe inspo!!

INGREDIENTS
475g lamb mince, rolled into balls
1 tbsp oil
1 onion, grated
4 garlic cloves, crushed
1 tsp ginger
2 tsp cumin
1/2 tsp cinnamon
2 tsp smoked paprika
500g passata
3 tbsp tomato puree
2 tbsp lemon juice
150ml stock
Seasoning
200g chickpeas
5-6 black pitted olives
2 tbsp dairy-free yoghurt
Coriander & rice to serve
METHOD
Melt the oil in a large non-stick frying pan over a high heat, add the meatballs and brown for 2-3 minutes on all sides.
Stir in the onion, garlic, ginger, spices, passata, puree, lemon juice and stock. Season and bring to a rapid boil. Cook, stirring occasionally for 8-10 mins, until meatballs are cooked through and sauce has thickened.
Stir in the chickpeas and olives and cook for 3-4 minutes more. Serve with rice, a dollop of yoghurt and scatter with coriander. Enjoy!!
