Kale, Bacon & Roast Potato Warm Salad 😘😘 Wow – what a flavour combo and the honey and balsamic dressing was the cherry on the cake so delicious!! Recipe for 2 below:
INGREDIENTS
2 Medium potatoes, diced
Olive oil
2 carrots, chopped into batons
1 red onion, cut into wedges
100g bacon lardons
1 garlic clove, crushed
2 tbsp balsamic vinegar
3 tbsp raw honey
1 tsp cumin
200g kale
Toasted almonds to serve
METHOD
Preheat oven to 180Β°C, boil the potatoes for 6 minutes, then drain, put back into the pan and shake them to fluff up a little, pop them on a baking tray drizzle with olive oil, mix and bake for 30-40mins. Place the carrots and onion onto another baking tray, drizzle with half of the honey and a tsp cumin, mix well and bake for 20-25 mins. Meanwhile, cook the bacon lardons in a dry frying pan for 4 mins until crispy, add the garlic and stir well. Take off the heat, add the balsamic and honey and stir well. Take the carrots out of the oven, lay the kale over the top and bake for 4 mins be careful not to burn. Mix the potatoes and bacon into the veggies and serve in bowls with toasted almonds. Enjoy!!
