Honey & Garlic Tofu with Mushroom Brown Rice 😘😘 A quick and easy vegan recipe perfect for midweek! Recipe for 2 below:
INGREDIENTS:
1 block of Tofu
1 pack of Chestnut mushrooms, sliced
1 Bok Choy, slicedπŸ₯¬
1 garlic clove, crushed
1 tbsp brown rice flour
1 tbsp raw honey
1 tbsp low sodium soy sauce
Cooked brown rice
METHOD
In a little olive oil fry the mushrooms for 4 mins until golden, add in the bok choy and cook for 2 mins, add in the garlic, cook for 1 min. Remove veg and set aside. Meanwhile drain and pat dry the tofu and mix with flour and season well. Pop some more oil into the pan and add the tofu, fry until crisp about 4 mins. Mix the honey and soy and add to the pan quickly stirring around coating the tofu. Stir the mushroom mix through the cooked rice and add a splash of soy. Serve the Tofu on a bed of mushroom rice and sprinkle with parsley. Enjoy!!
