Crispy Filo Topped Fish Pie 😘😘 – Proper winter warmer and not too bad on the hips, we all loved this, even Reggie but he is not a fan of Mash just like his Momma. Recipe for 4 below:
1 onion, finely diced
2 leeks, sliced
1 garlic clove crushed
250ml oat milk or semi skimmed
350g cod, cut into chunks
230g smoked haddock, chunked
2 bay leaves
80g frozen peas
175g cooked prawns
1 tbsp cornflour or xanthan gum
4 sheets filo pastry
1 egg beaten
Veggies to serve
Preheat oven to 160c fan. Spray a large frying pan with frylight or olive oil, over a medium heat, xook the onion and leek for 10 mins until softened. Add the garlic and fry for 2 mins. Add the milk, cod and haddock, cover and simmer for 15 mins on low.
Place a colander over a large bowl, gently drain the cooking liquid. Place the fish and veg into an ovenproof dish, add the prawns and remove the bay leaves, set aside.
Place the liquid back into the feying pan, mix the cornflour with water and stir into the cooking liquid to thicken, season if needed. Pour over the fish.
Scrunch up the filo and place on top, glaze with the beaten egg and cook in the oven for 30-35 mins. Enjoy!!
