Creamy Chicken, Bacon & Mushroom Pasta – Easy & delicious recipe that will feed the whole family 😘😘 I love a meal that we can all just dive into, Reggie demolished this one!! Recipe for 4 below:
INGREDIENTS
400g Penne/GF Pasta
2 Chicken Breasts, cut into slices
4 Chestnut mushrooms, sliced
2 bacon rashers, cooked well and crumbled
2 garlic cloves, minced
Handful of peas
Paprika
200ml Stock
200ml dairy free yoghurt or cream
Parsley
Parmesan or dairy free option grated
METHOD
Cook the pasta according to packet instructions adding the peas 5 minutes to the end of cooking time and drain. Meanwhile, fry the chicken in a little olive oil and sprinkle with paprika, add the garlic and stir well cooking for 4-5mins. Add the mushrooms and cook for 2 mins, crumble in half of the bacon, add the stock and reduce, add the yoghurt/cream stir well and season to taste. Add the drained pasta and peas and stir well to coat, ensure the chicken is cooked through and serve sprinkled with the rest of the bacon, parsley and cheese of your choice. Enjoy!!
