Creamy Cajun Chicken & Spinach Pasta – delicious freshly cooked meal in under 20 mins 😘😘 gluten free pasta for me
Recipe for 2 below:
INGREDIENTS
200g Penne Pasta
280g diced chicken thigh
1 Shallot, finely diced
1 garlic clove, crushed
1 tsp cajun spice
2 tbsp water
250ml Passata
1 chicken stock cube
100g baby spinach
40g italian hard cheese or dairy free option
75g creme fraiche or dairy free yoghurt
METHOD
Cook Pasta according to packet instructions and drain. Meanwhile, fry the chicken in a little olive oil in a non-stick pan for 5-6 mins and season. Add the shallot and cook until softened 3-4 mins. Add the garlic and cajun spice and cook for 1 min. Add the water, passata and stock cube, bring to a boil and simmer on low for 10 mins, if it starts to stick add a little more water. Once thickened add the spinach, stir until wilted. Add the cheese and Creme fraiche, stir well and remove from heat. Stir through the pasta and serve. Enjoy!!
