Chickpea curry – This is one of my go to recipes when I am in need of something quick but healthy and delicious, I always have chickpeas in the cupboard and this can be rustled up in leas than 15 mins 😘😘 Recipe for 3 below:
INGREDIENTS
1 onion diced
2 garlic cloves crushed or garlic puree
1tsp curry powder
1/2tsp ground cumin
1/2tsp garam masala
1/2 tap turmeric
1 tin tomatoes
1 tin of chickpeas
1/2 tin coconut milk
Coriander
Brown rice to serve
METHOD
Fry the onion and garlic until softened, add the spices and gently cook for 2 mins, add the tomatoes and cook for 3 mins, add the chickpeas and coconut milk and cook for 5 mins, serve sprinkled with coriander and brown rice on the side. Enjoy!!
