Chicken & Veggie Rice bowl 😘😘 Quick and easy recipe perfect for midweek or using up leftover chicken – One for the whole family to enjoy. Recipe for 4 below:
200g cooked chicken, diced
1 onion, diced
1 garlic clove, crushed
1 pepper, diced
Handful of mixed frozen veg
600ml veg or chicken stock
300g rice (brown, basmati or long-grain)
1 tsp turmeric
1 tsp paprika
Chilli flakes
Fried eggs and parsley to serve
METHOD
In a large non-stick wok or frying pan add a little olive oil and fry the onion for 3-4 mins until softened, add the garlic and pepper and fry for a couple of mins. Add the mixed veg and chicken, stir in the rice, turmeric, paprika and chilli flakes and mix well. Pour in the stock, bring to the boil, pop on a lid and simmer for 8-10 mins until the water has been absorbed topping up with water if it becomes too dry. Mix well and serve in bowls topped with parsley and a fried egg. Enjoy!!
