Cajun Salmon Po’ Boy 😘😘 10 minute meal that packs a punch, perfect Saturday Treat with thanks to jamieoliver . Recipe for 2 below:
1 tbsp slice green Jalapeños
1/2 bunch Coriander
2 heaped tsp Cajun seasoning
4 heaped tbsp dairy free or greek yoghurt
2 x Salmon fillets, cut into half
1 gem lettuce, finely sliced
1 large ripe tomato, sliced
1/4 cucumber, sliced
2 sub rolls toasted
Blend the jalapeños with the coriander and set aside. In a bowl mix the cajun seasoning with half the yoghurt then toss the salmon into the mixture until well coated. Place a large non-stick frying pan on a medium heat, add a little olive oil and cook the salmon for 4 mins turning regularly.
Half the lightly toasted rolls, spread a little yoghurt onto the bottom half, top with the tomato, cucumber and lettuce. Then top with the salmon fillets. Spoon over a little more yoghurt and some of the jalapeño salsa. Enjoy!!
