Beef Koftas, gluten free couscous & dairy free Harissa Yoghurt 😘😘 30 days to healthy living programme, treat your body to healthy and delicious meals, this one was a winner in our house!! Gluten & dairy free. Inspired by hellofreshuk

INGREDIENTS
250g 5% fat mince
1 red onion, finely diced
1 pepper, finely diced
1 lemon, zested & halved
Mint leaves, finely chopped
1 garlic cloves crushed
10 baby plum tomatoes, halved
4 tbsp dairy free yoghurt
1 tbsp harissa paste
250ml gf stock
120g gluten free couscous
METHOD
Mix the beef with half the garlic and some seasoning and form koftas, heat a splash of oil in a frying pan and cook the koftas for 15-20 mins on a medium heat until cooked through. Meanwhile heat a bit of oil in a saucepan and cook the onion and pepper for 6 mins until softened, stir in half the garlic, cook for a minute and add the stock. Bring to the boil, take off the heat and stir the couscous, pop a lid on and steam for 10 mins. Mix the tomatoes in a bowl with some olive oil and half of the chopped mint and season.
Once the couscous is cooked, add the lemon zest, half of the mint and a squeeze of lemon juice, fluff up with a fork. Mix the dairy free yoghurt with the harissa paste. Serve the couscous in a bowl with the koftas, tomato salad and a dollop of harissa yoghurt! Enjoy!!
